Golden Butternut Squash Risotto

Hey there, foodies! Today, I’m excited to share with you a recipe that I recently stumbled upon during a cozy fall evening. This Golden Butternut Squash Risotto is the perfect comforting dish for those chilly nights when you’re craving something warm and creamy.

For this recipe, you’ll need the following ingredients:

  • butternut squash (500g, cubed)
  • arborio rice (300g)
  • onion (1, diced)
  • garlic cloves (3, minced)
  • vegetable broth (1 liter)
  • white wine (1/2 cup)
  • butter (2 tbsp)
  • parmesan cheese (100g, grated)
  • fresh sage leaves (10 leaves)

To make this delicious risotto, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • saucepan
  • wooden spoon
  • grater

Start by heating a tablespoon of butter in a saucepan over medium heat. Add in the diced onion and minced garlic, stirring until fragrant. Next, toss in the arborio rice, toasting it until slightly golden and nutty.

Pour in the white wine, stirring continuously until it has been absorbed by the rice. Add in a ladleful of vegetable broth, stirring until absorbed. Continue this process until the rice is al dente, about 18-20 minutes.

In a separate pan, sauté the cubed butternut squash in the remaining butter until tender and slightly caramelized. Season with salt and pepper to taste.

Once the risotto is cooked to your liking, fold in the cooked butternut squash and grated parmesan cheese. Tear the fresh sage leaves and sprinkle them on top for a burst of flavor.

The total weight of the cooked Golden Butternut Squash Risotto is approximately 1400g, with 6 servings at 233g each. One serving is approximately 350 calories.

A unique tip for this recipe is to garnish each serving with crispy sage leaves. Simply fry the sage leaves in a bit of olive oil until crisp, then place them on top of the risotto for an extra layer of flavor and texture.

I encourage you to give this Golden Butternut Squash Risotto a try and make it your own by adding in your favorite seasonal vegetables or herbs. Enjoy!
