Spicy Coconut Curry with Cilantro-Lime Rice

Today, I’m excited to share with you a recipe that brings together some of my favorite flavors in a comforting and satisfying dish. This spicy coconut curry with cilantro-lime rice is perfect for a cozy night in or a vibrant dinner with friends. The combination of creamy coconut milk, bold spices, and fresh herbs creates a harmony of taste that will leave you craving more.

Ingredients:

  • 500g chicken breast (diced)
  • 400ml coconut milk
  • 2 bell peppers (sliced)
  • 1 onion (chopped)
  • 4 cloves of garlic (minced)
  • 1-inch piece of ginger (grated)
  • 2 tbsp curry powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • to taste
  • 1 lime (juiced)
  • 1/2 cup cilantro (chopped)
  • 1 cup basmati rice

Kitchen Tools:

  • large skillet
  • wooden spoon
  • chef’s knife
  • cutting board
  • grater

To start, heat a large skillet over medium heat and add the diced chicken breast. Cook until the chicken is browned on all sides, then remove it from the skillet and set it aside. In the same skillet, add the chopped onion, sliced bell peppers, minced garlic, and grated ginger. Cook until the vegetables are tender.

Next, stir in the curry powder, chili powder, cumin, salt, and pepper. Pour in the coconut milk and bring the mixture to a simmer. Add the cooked chicken back to the skillet and let it simmer for another 10 minutes, allowing the flavors to meld together.

While the curry is simmering, prepare the cilantro-lime rice. Cook the basmati rice according to the package instructions. Once cooked, fluff the rice with a fork and stir in the chopped cilantro and lime juice.

Serve the spicy coconut curry over the cilantro-lime rice, garnished with additional cilantro and a lime wedge. The creamy coconut milk, spicy curry flavors, and bright cilantro-lime rice create a delicious and satisfying meal that will warm you from the inside out.
