Ingredients:

  • Arborio rice (300g)
  • Button mushrooms (200g)
  • Coconut milk (400ml)
  • Vegetable broth (1 liter)
  • Shallots (2, finely chopped)
  • Garlic (3 cloves, minced)
  • Fresh thyme (1 tablespoon)
  • Olive oil (2 tablespoons)
  • Salt and pepper to taste

To start, heat the olive oil in a saucepan over medium heat. Add the shallots and garlic, cooking until softened. Stir in the Arborio rice and cook for a few minutes until lightly toasted.
