Ingredients:

  • 200g Arborio rice
  • 400ml coconut milk
  • 1L vegetable broth
  • 250g mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 100ml white wine
  • Handful of fresh parsley, chopped
  • 2 tbsp olive oil
  • To taste

To start, heat the vegetable broth in a saucepan over low heat. In another large saucepan, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened.

Add the Arborio rice to the saucepan and toast for a few minutes until lightly golden. Pour in the white wine and stir until absorbed. Begin adding the warmed vegetable broth, one ladleful at a time, stirring continuously until absorbed before adding more.

Once the rice is almost cooked, stir in the sliced mushrooms and continue adding the vegetable broth until the rice is creamy and tender. Pour in the coconut milk, stirring well to combine. Season with salt and pepper to taste.

Remove the risotto from the heat and stir in the chopped fresh parsley. Serve hot, garnished with extra parsley if desired.
