This dish combines the creamy richness of traditional mac and cheese with the umami flavor of miso and the sweetness of roasted butternut squash.

For this recipe, you will need the following ingredients:

  • butternut squash (500g, peeled and diced)
  • macaroni (300g)
  • miso paste (2 tbsp)
  • butter (50g)
  • flour (50g)
  • milk (500ml)
  • cheddar cheese (200g, grated)
  • parmesan cheese (50g, grated)
  • breadcrumbs (50g)
  • olive oil
  • salt and pepper

To make this dish, you will need the following kitchen tools:

  • baking sheet
  • saucepan
  • blender
  • oven

Start by preheating your oven to 200°C. Place the diced butternut squash on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast in the oven for 25-30 minutes until tender and slightly caramelized.

In the meantime, cook the macaroni according to package instructions until al dente. Drain and set aside.

In a saucepan, melt the butter over medium heat. Stir in the flour to create a roux, then gradually whisk in the milk until smooth and thickened. Add the miso paste, cheddar cheese, and parmesan cheese, stirring until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.

In a blender, combine the roasted butternut squash with the cheese sauce and blend until smooth and creamy. Pour the mixture over the cooked macaroni and stir to combine.

Transfer the mac and cheese to a baking dish. In a small bowl, mix the breadcrumbs with a drizzle of olive oil and sprinkle over the top.

Bake in the oven for 20-25 minutes until the top is golden and bubbly. Serve hot and enjoy the unique flavors of this Miso Butternut Squash Mac & Cheese.
