Fall Comfort Food: Butternut Squash Mac and Cheese

Today, I’m excited to share with you my unique twist on a classic comfort food dish that’s perfect for the fall season. This Butternut Squash Mac and Cheese is creamy, cheesy, and packed with the delicious flavors of autumn. It’s the ultimate cozy meal for chilly evenings or lazy weekends at home.

Ingredients:

  • 1 small butternut squash, peeled and diced (about 500g)
  • 300g macaroni pasta
  • 200g cheddar cheese, shredded
  • 50g parmesan cheese, grated
  • 250ml heavy cream
  • 50g butter
  • 1/2 tsp nutmeg
  • to taste
  • to taste

Kitchen Tools:

  • saucepan
  • baking sheet
  • blender

To start, preheat your oven to 400°F (200°C). Place the diced butternut squash on a baking sheet, drizzle with olive oil, and roast in the oven for about 30 minutes or until tender.

Cook the macaroni pasta according to the package instructions until al dente. Drain and set aside.

In a saucepan, melt the butter over medium heat. Add the roasted butternut squash, heavy cream, cheddar cheese, parmesan cheese, nutmeg, salt, and pepper. Stir until the cheese is melted and the sauce is creamy.

Transfer the cheese mixture to a blender and blend until smooth. Pour the sauce over the cooked macaroni and stir until well combined.

Adjust seasoning if needed, and serve the Butternut Squash Mac and Cheese hot, garnished with a sprinkle of freshly ground black pepper for an extra kick.

This unique twist on traditional mac and cheese is not only delicious but also a great way to sneak in some extra veggies. The butternut squash adds a rich, creamy texture and a subtle sweetness that pairs perfectly with the sharp cheddar and nutmeg.
