Greetings, fellow food lovers! Ingredients:

  • 200g Arborio rice
  • 400ml coconut milk
  • 2 tbsp red curry paste
  • 1 liter vegetable broth
  • 1 large bell pepper, diced
  • 100g frozen peas
  • Handful of fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper, to taste

Kitchen Tools:

  • grater

To start, heat a saucepan over medium heat and add the red curry paste. Cook for 1-2 minutes until fragrant. Stir in the Arborio rice and cook for another minute, stirring constantly. Slowly pour in the coconut milk, stirring continuously until the rice absorbs the liquid.

Gradually add the vegetable broth, 1 cup at a time, stirring frequently and allowing the rice to absorb the broth before adding more. This process will take about 20-25 minutes until the rice is creamy and cooked to al dente.

In a separate skillet, sauté the diced bell pepper until slightly softened. Add the frozen peas and cook for another 2-3 minutes until heated through. Season with salt and pepper.

Once the risotto reaches the desired consistency, stir in the cooked bell pepper and peas mixture. Add the chopped cilantro and lime juice, stirring gently to combine all the flavors. Adjust seasoning with salt and pepper to taste.

Serve the coconut curry risotto hot, garnished with additional cilantro leaves and a lime wedge for squeezing over the dish. Enjoy the unique blend of creamy coconut, spicy curry, and fresh herbs in every bite!
