My Unique Spin on Classic Mac and Cheese

Today, I’m excited to share my twist on a classic comfort food favorite — mac and cheese! This recipe was inspired by a cozy rainy day at home, where I decided to get creative in the kitchen and experiment with some unusual flavor combinations. The result? A creamy, decadent mac and cheese that’s sure to impress even the pickiest of eaters.

For this recipe, you’ll need the following ingredients:

  • penne pasta (200g)
  • goat cheese (100g)
  • pumpkin puree (150g)
  • bacon bits (50g)
  • fresh sage leaves (10g)
  • milk (200ml)
  • butter (50g)
  • flour (30g)
  • salt (to taste)
  • black pepper (to taste)

To bring this dish to life, you’ll need the following kitchen tools:

  • saucepan
  • whisk
  • oven
  • baking dish

Start by preheating your oven to 180°C. Cook the penne pasta according to the package instructions until al dente. In a saucepan, melt the butter over medium heat and whisk in the flour to create a roux. Slowly whisk in the milk until smooth and thickened.

Add in the goat cheese, pumpkin puree, bacon bits, and chopped fresh sage leaves. Season with salt and black pepper to taste. Mix until the cheese is melted and all ingredients are well combined.

Once the sauce is ready, toss in the cooked pasta and stir until evenly coated. Transfer the mixture to a baking dish and bake in the preheated oven for 20-25 minutes, or until bubbly and golden brown on top.

Once the mac and cheese is done, remove it from the oven and let it cool for a few minutes before serving. Enjoy the creamy goodness of the goat cheese and pumpkin paired with the smoky bacon and fragrant sage.

This unique mac and cheese dish weighs approximately 800g, serves 4 people, with each serving weighing about 200g. Each serving is estimated to be around 400 calories.

A clever tip for this recipe is to sprinkle some grated Parmesan cheese on top before baking for an extra depth of flavor and a crispy finish. Feel free to experiment with different cheeses, herbs, or even adding in some roasted vegetables to make this dish your own. Happy cooking!
