To start, gather the following ingredients:

  • 2 ripe mangoes, cubed
  • 400ml coconut milk
  • 1 can of chickpeas, drained and rinsed
  • 3 tablespoons of red curry paste
  • 1 red bell pepper, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 lime, juiced
  • Fresh coriander leaves, for garnish
  • Salt and pepper, to taste

Next, make sure you have the following kitchen tools ready:

  • knife
  • cutting board
  • saucepan
  • wooden spoon

Start by heating a splash of oil in a saucepan over medium heat. Add the chopped onion, minced garlic, and grated ginger, and sauté until fragrant. Stir in the red curry paste and cook for another minute until the flavors meld together.

Add the sliced bell pepper and cubed mango to the saucepan. Pour in the coconut milk and stir well to combine. Let the curry simmer for about 10 minutes until the mango softens and the flavors meld together.

Once the mango is tender, add the drained chickpeas to the curry and stir to heat through. Season with salt, pepper, and a squeeze of lime juice for a touch of brightness.

Serve the creamy mango coconut curry hot, garnished with fresh coriander leaves. The combination of sweet mango, creamy coconut milk, and spicy curry paste is sure to tantalize your taste buds.
