Greetings, foodie friends! Today, I’m excited to share one of my favorite fusion recipes that perfectly blends the creamy Italian comfort of risotto with the bold flavors of Indian mango curry. This dish is a delightful surprise for your taste buds and is perfect for a cozy night in or a special dinner with loved ones.

Ingredients:

  • arborio rice (300g)
  • mango, diced (1 large)
  • coconut milk (400ml)
  • vegetable broth (1 liter)
  • onion, chopped (1 medium)
  • ginger, minced (1 tbsp)
  • garlic, minced (2 cloves)
  • curry powder (1 tbsp)
  • cumin (1 tsp)
  • coriander (1 tsp)
  • cilantro, chopped (for garnish)
  • salt and pepper to taste

Kitchen Tools:

  • saucepan
  • wooden spoon
  • chef’s knife
  • cutting board

To start, heat some oil in a saucepan over medium heat. Add the chopped onions and sauté until they are soft and translucent. Next, add the minced garlic, ginger, curry powder, cumin, and coriander. Stir to combine and let the spices bloom for a minute.

Add the arborio rice to the pan and toast it for a few minutes until it becomes fragrant. Pour in a ladleful of vegetable broth and stir continuously until the liquid is absorbed. Continue adding the broth gradually, stirring often, until the rice is creamy and cooked to al dente.

In a separate saucepan, heat the coconut milk until warm. Pour the coconut milk into the risotto and stir well. Add the diced mango and season with salt and pepper to taste. Let the flavors meld together for a few minutes before serving.

Garnish the mango curry risotto with fresh cilantro for a pop of color and freshness. Serve hot and enjoy the unique blend of creamy risotto with the exotic flavors of mango curry.
