As the leaves outside turn vibrant shades of red and gold, I find myself craving warm, comforting dishes to enjoy on chilly autumn evenings. That’s why I’m excited to share my latest creation with you today: a unique twist on a classic comfort food that will surely warm your soul.

For this dish, I decided to combine the earthy flavors of mushrooms with the richness of goat cheese to create a creamy and decadent pasta bake. The result is a dish that is both satisfying and indulgent, perfect for a cozy night in with loved ones.

To bring this recipe to life, you’ll need the following ingredients:

  • penne pasta (250g)
  • button mushrooms (200g)
  • goat cheese (100g)
  • heavy cream (150ml)
  • garlic cloves (2)
  • fresh thyme (1 tbsp)
  • salt (to taste)
  • black pepper (to taste)

And don’t forget to grab these essential kitchen tools:

  • chef’s knife

  • wooden spoon

Start by preheating your oven to 375°F (190°C). Cook the penne pasta according to package instructions until al dente, then drain and set aside. In a saucepan, sauté sliced mushrooms and minced garlic in a bit of olive oil until softened and fragrant. Season with salt, pepper, and fresh thyme.
