Today, I’m sharing my recipe for a savory pumpkin risotto that perfectly captures the essence of fall. The creamy texture of the risotto pairs beautifully with the earthy flavor of pumpkin, creating a dish that is both luxurious and satisfying.

To begin, gather the following ingredients:

  • Arborio rice (300g)
  • Pumpkin, diced (400g)
  • Vegetable broth (1 liter)
  • Onion, finely chopped (1 medium)
  • Garlic, minced (2 cloves)
  • White wine (150ml)
  • Parmesan cheese, grated (100g)
  • Butter (50g)
  • Fresh thyme, chopped (2 tbsp)
  • Salt and pepper to taste

You will also need the following kitchen tools:

  • Saucepan
  • Wooden spoon
  • Chef’s knife
  • Grater

Start by heating the vegetable broth in a saucepan over low heat. In a separate saucepan, melt the butter over medium heat and sauté the chopped onion until translucent. Add the minced garlic and Arborio rice, stirring until the rice is coated in the butter.

Pour in the white wine and cook until the liquid has been absorbed. Begin adding the warm vegetable broth, one ladleful at a time, stirring constantly and allowing the liquid to be absorbed before adding more. This process will take about 20-25 minutes, so be patient and enjoy the aromas wafting from the stove.

Once the Arborio rice is creamy and al dente, stir in the diced pumpkin and fresh thyme. Cook for an additional 5-7 minutes until the pumpkin is tender. Remove the risotto from heat and fold in the grated Parmesan cheese. Season with salt and pepper to taste.

Serve the savory pumpkin risotto hot, garnished with a sprinkle of fresh thyme and an extra grating of Parmesan cheese. This dish weighs approximately 1200g in total and serves 4 people, with each serving weighing around 300g. Each serving contains approximately 400 calories.
