Creamy Purple Sweet Potato Soup with Watermelon Radish

Today, I am excited to share a unique and flavorful recipe that I have been experimenting with recently. This dish is perfect for a cozy night in or a special gathering with friends. I can’t wait for you to try it out and experience the delicious combination of ingredients!

Ingredients

  • purple sweet potato (200g)
  • watermelon radish (100g)
  • Szechuan peppercorns (5g)
  • quail eggs (6)
  • coconut milk (200ml)

Preparation

To start, peel and dice the purple sweet potato into small cubes. Next, thinly slice the watermelon radish and set aside. In a saucepan over medium heat, dry roast the Szechuan peppercorns until fragrant, then grind them into a fine powder using a mortar and pestle.

In a separate saucepan, bring water to a boil and gently add the quail eggs. Boil for 5 minutes, then transfer to an ice bath to cool before peeling. Set the peeled quail eggs aside.

Add the diced purple sweet potato to a saucepan with coconut milk and the ground Szechuan peppercorns. Simmer over low heat until the sweet potato is tender. Once cooked, blend the mixture until smooth.

Cooking the Radish

In a separate pan, sauté the sliced watermelon radish in a bit of oil until slightly caramelized and tender. Season with a pinch of salt and set aside.

Assembling the Dish

To serve, pour the creamy purple sweet potato soup into bowls. Halve the quail eggs and place them on top of the soup. Garnish with the sautéed watermelon radish slices for a pop of color and flavor.

Tips

For an extra kick of heat, you can add a sprinkle of chili flakes to the soup before serving. This will give the dish a spicy twist that complements the creamy sweetness of the purple sweet potato.

Serving

This unique dish weighs approximately 600 grams after cooking and serves 2 people. Each serving is around 300 grams with an estimated calorie count of 350 per portion.
