Creamy Thai Peanut Noodles: A Tofu Lover’s Dream

Spicy Thai Peanut Noodles with Crispy Tofu

Hey there, foodies! Today, I’m excited to share one of my all-time favorite noodle recipes: Spicy Thai Peanut Noodles with Crispy Tofu. This dish is the perfect combination of creamy peanut sauce, vibrant veggies, and crispy tofu, all tossed together with tender noodles. It’s a flavor explosion that will surely satisfy your taste buds!

Ingredients:

  • rice noodles (200g)
  • firm tofu (400g)
  • bell peppers, thinly sliced (150g)
  • green onions, chopped (50g)
  • peanuts, crushed (50g)
  • coconut milk (200ml)
  • soy sauce (30ml)
  • peanut butter (50g)
  • sriracha sauce (15ml)
  • lime juice (1 lime)
  • garlic, minced (2 cloves)
  • ginger, grated (1 tsp)
  • vegetable oil

Kitchen Tools:

  • large pot
  • skillet
  • whisk
  • baking sheet

To start, cook the rice noodles according to the package instructions. Drain and set aside. In a skillet, heat some vegetable oil over medium heat and add the tofu cubes. Cook until crispy on all sides, then remove from the skillet and set aside.

In the same skillet, add the bell peppers, green onions, garlic, and ginger. Sauté until the veggies are tender. In a separate bowl, whisk together the coconut milk, soy sauce, peanut butter, sriracha, and lime juice. Pour the sauce into the skillet with the veggies and simmer until it thickens slightly.

Add the cooked noodles and crispy tofu to the skillet, tossing everything together until well combined. Serve the Spicy Thai Peanut Noodles garnished with crushed peanuts and a squeeze of lime juice. Enjoy your delicious and satisfying meal!
