Unique Mango Basil Cheesecake

Today, I’m excited to share a dessert recipe that combines the sweetness of mango with the freshness of basil in a unique and delicious cheesecake. This creative twist on a classic dessert will surely impress your guests and elevate any special occasion.

Ingredients:

  • 200g digestive biscuits
  • 100g butter
  • 2 ripe mangoes
  • 500g cream cheese
  • 150g sugar
  • 3 eggs
  • 1/2 cup fresh basil leaves
  • 200ml whipping cream
  • 10g gelatin

Kitchen Tools:

  • food processor
  • mixing bowl
  • spatula
  • springform pan
  • whisk

To start, crush the digestive biscuits in a food processor and mix them with melted butter. Press this mixture onto the bottom of a springform pan to create the crust. Chill in the refrigerator while you prepare the filling.

Next, puree one and a half mangoes in a blender until smooth. In a mixing bowl, beat cream cheese, sugar, and eggs until creamy. Add in the mango puree and chopped basil leaves, mixing until well combined. Pour this mixture over the chilled crust and bake in a preheated oven at 180°C for about 45 minutes.

Meanwhile, whip the cream until soft peaks form. Puree the remaining half mango and strain the puree. Dissolve gelatin in a bit of hot water and mix it with the mango puree. Fold this mixture into the whipped cream, creating a light and flavorful topping.

Once the cheesecake is baked and cooled, spread the mango-basil cream over the top. Refrigerate the cheesecake for at least 4 hours to set before serving.

This unique mango basil cheesecake weighs approximately 1500 grams once cooked, serving 12 people with an average serving weight of 125 grams. Each serving is estimated to have around 350 calories.

One clever tip to enhance the flavors of this cheesecake is to let it rest overnight before serving. This allows the mango and basil flavors to fully develop and infuse into the creamy cheesecake, creating a more intense and delicious dessert experience.
