This recipe was inspired by a rainy afternoon spent browsing through my spice cabinet, looking for unique flavor combinations. The end result is a dish that is both comforting and surprising, perfect for a cozy night in with loved ones.

Ingredients:

  • purple sweet potatoes (500g)
  • star anise (2 pieces)
  • coconut milk (400ml)
  • dried apricots (100g)
  • fresh ginger (50g)
  • cashews (50g)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • pot
  • blender

Preparation:

To start, peel and cube the purple sweet potatoes. In a pot, combine the sweet potatoes, star anise, and coconut milk. Bring to a gentle simmer over medium heat, cover, and cook until the sweet potatoes are tender. Remove the star anise and discard.

While the sweet potatoes are cooking, chop the dried apricots and fresh ginger. In a separate pan, toast the cashews until fragrant and golden brown. Set aside for garnish.

Once the sweet potatoes are cooked, carefully transfer everything to a blender and blend until smooth and creamy. Taste and adjust seasoning if necessary.

Tips for a Twist:

For an extra kick of flavor, try adding a pinch of ground cardamom or a squeeze of lime juice to the soup before blending. This will elevate the dish and add a refreshing twist to the creamy sweet potatoes.
