Greetings, foodies! I’m excited to share a fun and delicious recipe with you today that combines the best of breakfast and dinner. I was inspired by a recent trip to a local farmer’s market where I picked up some fresh, organic vegetables and decided to create a savory pancake stack that is as beautiful as it is tasty.

Ingredients:

  • all-purpose flour (200g)
  • baking powder (10g)
  • salt (5g)
  • milk (300ml)
  • eggs (2)
  • spinach (100g, chopped)
  • mushrooms (150g, sliced)
  • goat cheese (100g)
  • olive oil

Kitchen Tools:

  • mixing bowl
  • whisk
  • frying pan
  • spatula

Start by whisking together the flour, baking powder, and salt in a mixing bowl. In a separate bowl, beat the eggs and milk together until well combined. Slowly pour the wet ingredients into the dry ingredients, stirring until you have a smooth batter.

Heat a drizzle of olive oil in a frying pan over medium heat. Pour a ladleful of batter into the pan and cook until bubbles form on the surface, then flip and cook the other side until golden brown. Continue until all the batter is used up, stacking the pancakes on a plate as you go.

In the same pan, add a bit more olive oil and sauté the mushrooms until they are golden brown. Add the chopped spinach and cook until wilted. Season with salt and pepper to taste.

To assemble the savory pancake stack, place a pancake on a plate, top it with a spoonful of the mushroom and spinach mixture, then crumble some goat cheese on top. Repeat the layers until you have a tall and impressive stack.

Final Touches:

For a finishing touch, drizzle a bit of olive oil over the top of the stack and sprinkle with some freshly cracked black pepper.
