Deliciously Unique Eggplant Parmesan

Today I’m excited to share a new twist on a classic dish that is perfect for a cozy night in. This recipe for Eggplant Parmesan takes a creative spin on the traditional Italian favorite, incorporating unexpected flavors and textures that will surely leave you wanting more.

Ingredients:

  • 1 large eggplant (about 500g), sliced
  • 100g goat cheese
  • 50g crushed pistachios
  • Handful of fresh basil leaves
  • 300ml marinara sauce
  • 50g grated parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Kitchen Tools:

  • frying pan
  • oven

To start, preheat your oven to 200°C. Place the sliced eggplant on a baking sheet and drizzle with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes until the eggplant is tender and slightly browned.

While the eggplant is roasting, heat a frying pan over medium heat. Add the marinara sauce and goat cheese, stirring until the goat cheese has melted into the sauce.

Once the eggplant is done, remove it from the oven and begin assembling the dish. In a baking dish, layer the roasted eggplant slices with the goat cheese marinara sauce, fresh basil leaves, crushed pistachios, and grated parmesan cheese.

Place the dish back in the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly. Remove from the oven and let it rest for a few minutes before serving.

This Eggplant Parmesan weighs approximately 1000g in total and serves 4 people. Each serving is around 250g, and with its unique combination of flavors and textures, it’s a mouthwatering dish that’s sure to impress.
