The creamy texture of the risotto combined with the sweetness of the pumpkin creates a delightful flavor profile that will leave your taste buds tingling.

Ingredients:

  • 200g Arborio rice
  • 300g pumpkin puree
  • 1 liter vegetable broth
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 2 tbsp fresh sage, chopped
  • 50g Parmesan cheese, grated
  • 50g butter
  • To taste

To start, heat the vegetable broth in a saucepan over medium heat. In another saucepan, melt the butter and sauté the diced onion until translucent. Add the minced garlic and chopped sage, cooking for an additional minute until fragrant.

Next, add the Arborio rice to the saucepan with the onion mixture, stirring constantly until the rice is coated with the butter. Pour in a ladle of the warm vegetable broth and stir until absorbed. Continue adding the broth, one ladle at a time, and stirring until the rice is creamy and al dente.

Once the risotto reaches a creamy consistency, stir in the pumpkin puree and grated Parmesan cheese. Season with salt and pepper to taste, adjusting the seasoning as needed. Remove from heat and let it rest for a few minutes before serving.
