Hey there, foodies! Today, I’m excited to share a fun and flavorful recipe for Spicy Coconut Shrimp Tacos. I was inspired by the warm weather and craving something tropical with a kick. These tacos are a perfect combination of crunchy, juicy, and spicy — a real party in your mouth!

I’ll start with the star of the show: the spicy coconut shrimp. You’ll need about 400g of large shrimp, peeled and deveined. In a bowl, mix together 100g of coconut milk, 2 tablespoons of sriracha sauce, a pinch of salt, and a squeeze of lime juice. Add the shrimp to the marinade and let it sit for about 15 minutes to absorb all those delicious flavors.

Next, prepare the slaw by combining 150g of shredded cabbage, 50g of diced pineapple, 50g of diced red bell pepper, and a handful of chopped cilantro in a bowl. Toss everything together with a dressing made of 50g of mayonnaise, 1 tablespoon of honey, and a touch of salt and pepper.

Now, let’s move on to making the tangy avocado crema. In a blender, combine 1 ripe avocado, 50g of Greek yogurt, 1 clove of minced garlic, the juice of half a lime, and a pinch of salt. Blend until smooth and creamy, adding a splash of water if needed to reach your desired consistency.

For the assembly, heat a skillet over medium heat and cook the marinated shrimp for 2-3 minutes on each side until they’re pink and cooked through. Warm up some corn tortillas, then fill them with the spicy coconut shrimp, slaw, and a generous drizzle of avocado crema.
