Today, I’m excited to share with you a recipe for a crunchy kale and chickpea salad. This dish is perfect for a light and refreshing lunch on a warm summer day. The combination of hearty kale and crisply roasted chickpeas makes for a satisfying and flavorful meal.

Ingredients:

  • 200g kale
  • 150g canned chickpeas
  • 15ml honey
  • 1 lemon (juiced)
  • 30ml olive oil
  • 1 clove of garlic (minced)
  • to taste

  • whisk
  • knife

To start, preheat your oven to 200°C. Rinse and drain the canned chickpeas, then pat them dry with a paper towel. Spread them on a baking sheet and drizzle with olive oil, honey, salt, and pepper. Roast in the oven for 20-25 minutes until golden and crispy.

In the meantime, wash and chop the kale into bite-sized pieces. In a mixing bowl, whisk together the lemon juice, minced garlic, olive oil, salt, and pepper. Add the kale to the bowl and massage the dressing into the leaves until well coated.

Once the chickpeas are done, let them cool slightly before adding them to the kale salad. Toss everything together until evenly combined. Serve the salad immediately for maximum crunchiness.
