As the weather gets colder and the holiday season approaches, I always find comfort in indulging in warm, decadent breakfast dishes. Today, I’m excited to share a recipe that combines the rich flavors of chocolate and the sweetness of cherries in a delightful pancake dish that is perfect for a cozy weekend brunch at home.

Ingredients:

  • all-purpose flour (200g)
  • cocoa powder (30g)
  • baking powder (10g)
  • salt (5g)
  • sugar (30g)
  • milk (300ml)
  • eggs (2)
  • vanilla extract (10ml)
  • butter (50g, melted)
  • cherries (150g, pitted and chopped)
  • dark chocolate (100g, chopped)

  • ladle

To start, in a large mixing bowl, combine the flour, cocoa powder, baking powder, salt, and sugar. In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted butter. Slowly pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix the batter, as it may result in tough pancakes.

Next, gently fold in the chopped cherries and dark chocolate into the batter, ensuring they are evenly distributed. Heat a frying pan over medium heat and lightly grease it with butter. Using a ladle, pour a portion of the batter into the pan to form a pancake. Cook each pancake for 2-3 minutes on one side until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until cooked through.

Once all the pancakes are cooked, stack them on a plate and top with additional chopped cherries and a drizzle of melted dark chocolate for an extra indulgent touch. Serve warm and enjoy the burst of flavor in every bite.
