Preparation

To make this flavorful dessert, you will need the following ingredients:

  • 200g dark chocolate (70% cocoa)
  • 3 sprigs of fresh rosemary
  • 300ml heavy cream
  • 50g sugar
  • 2 egg whites

You will also need the following kitchen tools:

  • saucepan
  • mixing bowl
  • hand mixer
  • whisk

Start by chopping the dark chocolate into small pieces and placing them in a mixing bowl. In a saucepan, heat the heavy cream with the rosemary sprigs until it just begins to simmer. Remove from heat and let it steep for 10 minutes to infuse the cream with the rosemary flavor. Strain the cream to remove the rosemary sprigs.
