The Perfect Rich Chocolate Truffle Cake

Today, I’m excited to share my recipe for a decadent and rich chocolate truffle cake. This indulgent dessert is perfect for special occasions or when you simply need a sweet treat to lift your spirits. The combination of deep, dark chocolate and creamy truffle filling is sure to impress your taste buds.

Ingredients:

  • 300g dark chocolate (70% cocoa)
  • 200g butter
  • 200g sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 100g flour
  • 200ml double cream

To start, preheat your oven to 180°C. In a saucepan, melt the dark chocolate and butter together over low heat until smooth. In a mixing bowl, whisk together the sugar, eggs, and vanilla extract until light and fluffy. Slowly pour in the melted chocolate mixture, stirring continuously. Finally, fold in the flour until just combined.

Grease and line a cake tin with parchment paper. Pour the batter into the tin and bake in the preheated oven for 25-30 minutes, or until the cake is set but still slightly gooey in the middle. Allow the cake to cool completely before removing it from the tin.

While the cake is cooling, prepare the truffle filling. In a saucepan, heat the double cream until just simmering. Remove from heat and pour over the remaining dark chocolate, stirring until smooth and glossy. Let the mixture cool slightly before pouring it over the top of the cooled cake, allowing it to set in the fridge for at least 2 hours.

Once the truffle filling has set, slice the cake into generous portions and serve with a dollop of whipped cream or a scoop of vanilla ice cream. This rich chocolate truffle cake is best enjoyed with a cup of coffee or a glass of red wine.
