Decadent Creamy Risotto Recipe

Today’s Special: Creamy Truffle Risotto

Today, I’m excited to share one of my favorite indulgent dishes, perfect for a cozy date night or a special celebration. This creamy truffle risotto is a luxurious treat that will impress even the most discerning foodie.

Ingredients:

  • Arborio rice (300g)
  • Chicken stock (1 liter)
  • White wine (150ml)
  • Shallots (2, finely chopped)
  • Truffle oil (1 tbsp)
  • Parmesan cheese (50g, grated)
  • Butter (50g)
  • Salt and pepper to taste

Kitchen Tools:

  • saucepan
  • wooden spoon
  • grater

To start, heat the chicken stock in a saucepan until it is hot but not boiling. In a separate saucepan, melt the butter over medium heat and sauté the shallots until they are soft and translucent. Add the Arborio rice to the pan and toast it for a minute until it is lightly golden.

Next, pour in the white wine and stir until it is absorbed by the rice. Begin adding the hot chicken stock one ladle at a time, stirring continuously until each ladleful is absorbed before adding the next. This process should take about 18-20 minutes, and the rice should be creamy and tender but still have a slight bite.

Once the risotto is cooked to perfection, stir in the truffle oil, Parmesan cheese, salt, and pepper. Remove the pan from the heat and let it rest for a couple of minutes to allow the flavors to meld together. Serve the risotto hot, garnished with an extra drizzle of truffle oil and a sprinkle of Parmesan cheese.

This creamy truffle risotto weighs approximately 1050g after cooking and serves 4 people. Each serving is around 262g and contains approximately 380 calories.

Clever Tip:

For an extra decadent touch, shave some fresh truffle over the risotto just before serving to elevate the dish to gourmet status.
