My Unique Creation: Vegan Chocolate Beetroot Cake

Welcome to my kitchen! Today, I’m excited to share with you a special recipe that combines two unlikely ingredients to create a rich and moist vegan chocolate beetroot cake. This unique combination might sound unusual, but trust me, the earthy sweetness of beetroots enhances the flavor of the chocolate, making this cake a delightful treat for any occasion.

Ingredients:

  • 2 medium-sized beetroots (200g)
  • 1 cup of whole wheat flour (120g)
  • 1/2 cup of unsweetened cocoa powder (50g)
  • 1/2 cup of coconut sugar (100g)
  • 1/2 cup of melted coconut oil (120ml)
  • 2 tablespoons of flaxseed meal mixed with 6 tablespoons of water
  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla extract
  • A pinch of salt

To start, preheat your oven to 180°C (350°F) and grease a cake tin with coconut oil. Peel and dice the beetroots, then steam or boil them until they are fork-tender. In a food processor, blend the cooked beetroots until smooth.

In a mixing bowl, combine the beetroot puree, melted coconut oil, flaxseed mixture, coconut sugar, and vanilla extract. Mix well until fully combined. Sift in the flour, cocoa powder, baking powder, and salt. Fold the dry ingredients into the wet mixture until a smooth batter forms.

Pour the batter into the greased cake tin and smooth out the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

Once cooled, slice the vegan chocolate beetroot cake into decadent pieces and serve with a dusting of cocoa powder or a dollop of coconut whipped cream. Enjoy the moist and luscious texture of this unique dessert that will surely surprise your taste buds!
