This recipe came to me when I was craving something sweet but still wanted to sneak in some extra veggies. These brownie bites are the perfect combination of indulgent and nutritious, making them a guilt-free treat for any occasion.

Ingredients:

  • 1 medium sweet potato, peeled and diced (200g)
  • 1 cup rolled oats (90g)
  • 1/3 cup cacao powder (40g)
  • 1/4 cup maple syrup (60ml)
  • 1/4 cup almond butter (60g)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/3 cup chocolate chips (60g)

To start, preheat your oven to 350°F (180°C) and grease a mini muffin tin. In a food processor, pulse the diced sweet potato until smooth. Add in the rolled oats, cacao powder, maple syrup, almond butter, vanilla extract, and salt. Blend until well combined and smooth. Fold in the chocolate chips.

Scoop the batter into the mini muffin tin, filling each cup to the top. Bake for 20-25 minutes until the tops are set. Remove from the oven and let them cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

These Sweet Potato Brownie Bites are rich, fudgy, and packed with chocolatey goodness. The sweet potato adds a natural sweetness and moist texture, making each bite irresistible. The addition of almond butter gives a nutty flavor that complements the chocolate perfectly.
