Mushroom Risotto with Caramelized Onions

Today, I’m sharing a cozy and comforting recipe for Mushroom Risotto with Caramelized Onions. This dish is perfect for a chilly autumn evening when you’re craving something warm and hearty. The earthy flavors of the mushrooms combined with the sweetness of the caramelized onions create a decadent dish that is sure to impress.

Ingredients:

  • Arborio rice (300g)
  • Mushrooms, sliced (200g)
  • Onion, thinly sliced (1 large)
  • Garlic, minced (3 cloves)
  • Vegetable broth (1 liter)
  • White wine (1/2 cup)
  • Parmesan cheese, grated (1/2 cup)
  • Butter (2 tbsp)
  • Olive oil (2 tbsp)
  • Salt and pepper to taste

Kitchen Tools:

  • Wooden spoon
  • Frying pan
  • Grater

Start by heating the vegetable broth in a saucepan over low heat. In a separate frying pan, melt the butter with the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 20-25 minutes. Remove the onions from the pan and set aside.

In the same pan, add the mushrooms and garlic. Sauté until the mushrooms are golden brown and tender. Season with salt and pepper. Remove the mushrooms from the pan and set aside.

Next, add the Arborio rice to the pan and toast for a few minutes until translucent. Deglaze the pan with white wine, stirring constantly until the liquid is absorbed. Begin adding the warm vegetable broth, one ladle at a time, stirring continuously until the liquid is absorbed before adding more.

Continue this process until the rice is creamy and al dente, about 18-20 minutes. Stir in the cooked mushrooms, caramelized onions, and grated Parmesan cheese. Season with additional salt and pepper if needed.

Serve the Mushroom Risotto with Caramelized Onions hot, garnished with a sprinkle of Parmesan cheese and a drizzle of olive oil. Enjoy this delicious and indulgent dish with a glass of white wine for the perfect evening meal.
