That’s why today, I want to share with you my recipe for a unique twist on a classic favorite – Pumpkin Mac n’ Cheese. This dish combines the creamy goodness of macaroni and cheese with the earthy sweetness of pumpkin, creating a comforting and flavorful experience that’s perfect for the fall season.

Ingredients:

  • 250g macaroni
  • 200g pumpkin puree
  • 150g cheddar cheese, grated
  • 100g gouda cheese, grated
  • 300ml milk
  • 50g butter
  • 50g flour
  • 1/2 tsp nutmeg
  • 1 tsp salt
  • 1/2 tsp pepper

I start by cooking the macaroni according to the package instructions until al dente. In a separate saucepan, I melt the butter over medium heat and whisk in the flour to create a roux. Once it’s bubbly and golden, I slowly pour in the milk while whisking continuously to avoid lumps. Next, I add in the pumpkin puree, cheddar, and gouda cheese, stirring until everything is melted and well combined. I season the mixture with nutmeg, salt, and pepper.

Once the cheese sauce is ready, I fold in the cooked macaroni until it’s evenly coated. I transfer the mixture into an oven-proof dish and sprinkle some extra cheese on top for a gooey and crispy finish. I bake it in a preheated oven at 180°C for about 20 minutes until the cheese is bubbly and golden.

The result is a decadent and creamy Pumpkin Mac n’ Cheese that’s both savory and slightly sweet, with a hint of nutty flavor from the gouda cheese. The pumpkin adds a rich and velvety texture that complements the cheesy goodness perfectly.

This dish weighs approximately 1200g once cooked, serving 6 people with each portion weighing around 200g. Each serving is estimated to be around 400 calories.
