Greetings, fellow foodies! Today, I am excited to share with you a unique and decadent dessert that is perfect for any special occasion or simply to treat yourself to something sweet. The combination of fragrant rosemary and juicy strawberries in this panna cotta is truly a match made in culinary heaven.

For this recipe, you will need the following ingredients:

  • fresh strawberries (250g)
  • heavy cream (500ml)
  • sugar (100g)
  • gelatin (10g)
  • fresh rosemary (3 sprigs)

Be sure to have these essential kitchen tools on hand:

  • saucepan
  • fine mesh strainer
  • mixing bowl
  • ramekins

To begin, hull and quarter the fresh strawberries and set them aside. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Add in the sugar and fresh rosemary sprigs, stirring gently to infuse the cream with the herb’s aroma. Let it simmer for 5 minutes, then remove from heat and let it steep for another 10 minutes.

Meanwhile, sprinkle the gelatin over cold water to bloom. Once the cream mixture has infused with the rosemary, strain out the herb and return the cream to the saucepan. Gently heat the cream again and add in the bloomed gelatin, stirring until fully dissolved.

Divide the quartered strawberries among the ramekins, then carefully pour the warm cream mixture over the fruit. Chill the panna cotta in the refrigerator for at least 4 hours, or until set.

Once chilled, gently unmold the panna cotta onto serving plates and garnish with fresh rosemary sprigs and additional strawberries if desired. Each serving of this rosemary-infused strawberry panna cotta weighs approximately 150g and yields 4 servings. One serving contains approximately 300 calories.

A clever tip for enhancing the flavor of this dessert is to brush the strawberries with a bit of aged balsamic vinegar before adding them to the ramekins. The sweet-tart acidity of the vinegar will complement the creamy panna cotta beautifully.
