Today’s Special: Saffron-infused Lobster Risotto

As the weather turns cooler, I find myself craving warm, comforting dishes that are both decadent and satisfying. Today, I’m excited to share with you my unique take on a classic Italian dish – Saffron-infused Lobster Risotto. This recipe combines the rich flavors of lobster with the aromatic essence of saffron, creating a luxurious dish that is perfect for special occasions or cozy nights in.

Ingredients:

  • 1 lobster tail (150g)
  • 200g arborio rice
  • 1 shallot, finely chopped
  • 100ml white wine
  • a pinch of saffron threads
  • 500ml chicken stock
  • 50g butter
  • 50g Parmesan cheese, grated
  • fresh parsley, chopped (for garnish)

  • grater

To begin, start by bringing a large pot of salted water to a boil. Add the lobster tail and cook for about 8-10 minutes, until the shell turns bright red and the meat is opaque. Remove the lobster tail from the water, let it cool, then remove the meat from the shell and chop it into bite-sized pieces.

In a saucepan, melt the butter over medium heat. Add the chopped shallot and sauté until translucent. Stir in the arborio rice and cook for a few minutes until the rice becomes translucent around the edges. Add the white wine and stir until the wine is absorbed.

Meanwhile, heat the chicken stock in a separate saucepan. Add a pinch of saffron threads to the chicken stock and let it steep for a few minutes, infusing the liquid with the vibrant color and aroma of the saffron.

Begin adding the saffron-infused chicken stock to the rice mixture, one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Once the risotto reaches the desired consistency, gently fold in the chopped lobster meat and grated Parmesan cheese. Season with salt and pepper to taste. Serve the risotto hot, garnished with freshly chopped parsley.

This Saffron-infused Lobster Risotto serves 2, with each serving weighing approximately 400g. One serving is around 500 calories.

For an extra indulgent touch, try topping the risotto with a drizzle of truffle oil before serving. The earthy aroma of truffle oil complements the richness of the lobster and saffron, taking this dish to the next level. Enjoy!
