Ingredients:

  • 1 medium sweet potato, cooked and mashed (about 200g)
  • 1/2 cup caramelized onions (about 100g)
  • 200g dark chocolate, chopped
  • 1/2 cup butter (113g)
  • 1 cup brown sugar (200g)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup flour (60g)
  • 1/4 cup cocoa powder (25g)
  • 1/2 tsp salt

To start, preheat your oven to 350°F (180°C) and grease a baking pan. In a saucepan, melt the butter and dark chocolate together over low heat, stirring until smooth. Remove from heat and let it cool slightly.

In a mixing bowl, whisk together the mashed sweet potato, caramelized onions, brown sugar, eggs, and vanilla extract until well combined. Slowly pour in the melted chocolate mixture while whisking continuously.

Sift in the flour, cocoa powder, and salt, stirring until just combined. Be careful not to overmix. Pour the batter into the prepared baking pan and smooth the top with a spatula.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Let the brownies cool completely in the pan before slicing into squares.
