Ingredients:

  • Arborio rice (300g)
  • Butternut squash, diced (400g)
  • Blue cheese, crumbled (150g)
  • Chicken broth (1 liter)
  • Onion, chopped (1 medium)
  • Butter (50g)
  • White wine (200ml)
  • Fresh thyme, chopped (2 tbsp)
  • Salt and pepper to taste

To begin, heat the chicken broth in a saucepan over low heat. In a risotto pan, melt the butter and sauté the chopped onion until translucent. Add the Arborio rice to the pan and toast it lightly, stirring constantly for about 2 minutes.

Next, pour in the white wine and cook until it has been absorbed by the rice. Begin adding the warm chicken broth one ladle at a time, stirring continuously until each addition is absorbed before adding more. This process should take about 20-25 minutes.

When the rice is almost cooked, stir in the diced butternut squash and continue to cook until the squash is tender and the rice is creamy. Add the crumbled blue cheese and fresh thyme, stirring until the cheese has melted and the risotto is velvety and rich.

Season the risotto with salt and pepper to taste, and serve hot, garnished with extra thyme leaves and a sprinkle of crumbled blue cheese. The combination of creamy risotto, sweet butternut squash, and tangy blue cheese creates a truly unforgettable flavor experience.
