Today, I’m excited to share with you a unique and flavorful dish that combines the sweetness of blueberries with the freshness of basil in a creamy risotto. This dish is perfect for a summer evening when you want something light yet satisfying.

Ingredients:

  • 200g Arborio rice
  • 150g blueberries
  • 1/2 cup fresh basil, chopped
  • 50g grated Parmesan cheese
  • 1 liter chicken broth
  • 2 shallots, finely chopped
  • 1/2 cup white wine
  • 50g butter
  • 2 tbsp olive oil
  • To taste

Kitchen Tools:

  • saucepan
  • wooden spoon
  • grater
  • knife

Preparation:

Start by heating the chicken broth in a saucepan over medium heat. In another saucepan, melt the butter with the olive oil. Add the chopped shallots and cook until translucent. Then, add the Arborio rice and stir until the grains are coated with the butter and oil mixture.

Pour in the white wine and stir until it has been absorbed by the rice. Begin adding the warm chicken broth one ladle at a time, stirring constantly until the liquid is absorbed before adding more. This process will take about 20 minutes until the rice is cooked al dente.

Once the risotto is creamy and cooked to perfection, gently fold in the blueberries, chopped basil, and grated Parmesan cheese. Season with salt and pepper to taste. Remove from heat and let it rest for a few minutes before serving.

Tips:

For an extra burst of flavor, try adding a splash of balsamic vinegar to the risotto just before serving. The tanginess pairs perfectly with the sweetness of the blueberries.
