Today’s Culinary Adventure: Sweet Potato and Black Bean Enchiladas

As the weather gets cooler, I find myself craving comfort food that warms both my body and soul. That’s why I’m excited to share with you my latest creation: sweet potato and black bean enchiladas. This dish combines the sweetness of roasted sweet potatoes with the earthy flavors of black beans, all wrapped up in a warm tortilla and smothered in a spicy enchilada sauce. It’s a perfect meal for a cozy night in or for sharing with loved ones.

Ingredients:

  • 2 medium sweet potatoes, diced
  • 1 can of black beans, drained and rinsed
  • 8 corn tortillas
  • 2 cups of enchilada sauce
  • 1 cup of shredded cheese
  • Cumin, chili powder, and garlic powder to taste
  • Fresh cilantro for garnish

I start by roasting the diced sweet potatoes in the oven until they are tender and slightly caramelized. While the sweet potatoes are roasting, I mix the black beans with the spices in a bowl, creating a flavorful filling for the enchiladas. Once the sweet potatoes are done, I combine them with the black bean mixture, spooning the filling onto each corn tortilla and rolling it up tightly.

Next, I pour a generous amount of enchilada sauce into a saucepan and heat it up until it’s simmering. I place the rolled enchiladas into a baking dish, pour the hot enchilada sauce over them, and sprinkle the shredded cheese on top. I bake the enchiladas in the oven until the cheese is melted and bubbly.

Once the enchiladas are done, I garnish them with fresh cilantro for a pop of color and freshness. Each bite is a perfect balance of sweet, savory, and spicy flavors that will have you coming back for more.

The approximate total weight of the cooked dish is 1200 grams, with 4 servings. Each serving weighs around 300 grams. The approximate calorie count per serving is 400 calories.

One unique tip for this dish is to sprinkle some crumbled cotija cheese on top before serving for an extra burst of flavor and creaminess.
