Ingredients:

  • 2 medium sweet potatoes (about 500g)
  • 1 cup (125g) all-purpose flour
  • 1 large egg
  • 1 lemon, zested
  • 1 cup fresh basil leaves
  • 1/4 cup pine nuts, toasted
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup olive oil
  • Salt and pepper, to taste

Cook the gnocchi in boiling salted water until they float to the surface, then remove them with a slotted spoon. Toss the gnocchi in the lemon-basil pesto until evenly coated.
