Welcome to my kitchen! Today, I’m excited to share a recipe that combines the comforting flavors of spaghetti with a unique Thai twist. This dish is perfect for those days when you’re craving something familiar yet exciting. Let’s dive into this delicious fusion recipe!

Ingredients:

  • 200g spaghetti
  • 150ml coconut milk
  • 2 tbsp red curry paste
  • 1 red bell pepper, thinly sliced
  • 1 zucchini, julienned
  • 200g shrimp, peeled and deveined
  • 1 tbsp fish sauce
  • 1 lime, juiced
  • Handful of fresh basil leaves

To start, cook the spaghetti according to the package instructions in a large pot of salted boiling water. In a skillet, heat the coconut milk over medium heat until it starts to simmer. Add the red curry paste and stir until fragrant.

Next, add the sliced bell pepper and julienned zucchini to the skillet. Cook for a few minutes until the vegetables start to soften. Then, add the shrimp to the skillet and cook until they turn pink and opaque.

Once the spaghetti is cooked, drain it and add it to the skillet with the vegetables and shrimp. Mix everything together until well combined. Add fish sauce and lime juice to the skillet, adjusting the seasoning to your taste.

Finally, tear the fresh basil leaves and sprinkle them over the dish. Give everything one final toss before plating the Thai-inspired spaghetti. Enjoy this unique and flavorful dish hot, garnished with some extra basil leaves for a fresh touch!
