Today, I’m excited to share a unique and delicious recipe that combines flavors from both Italian and Japanese cuisines. These Tomato Basil Sushi Rolls are a fun twist on traditional sushi, bringing together the freshness of basil and tomatoes with the savory elements of sushi rice and nori. Perfect for a light lunch or a refreshing appetizer, these rolls are sure to impress your friends and family.

Ingredients:

  • 250g sushi rice
  • 300ml water
  • 50ml rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 4 nori sheets
  • 2 large fresh tomatoes, thinly sliced
  • 1 bunch of fresh basil leaves

Kitchen Tools:

  • sushi mat
  • sharp knife
  • rice paddle

Start by washing the sushi rice thoroughly until the water runs clear. Cook the rice in a rice cooker with water according to the manufacturer’s instructions. In a small saucepan, mix rice vinegar, sugar, and salt over low heat until the sugar and salt dissolve. Once the rice is cooked, transfer it to a large bowl and slowly drizzle the vinegar mixture over it, gently folding the rice to coat each grain. Let the rice cool to room temperature.

Place a nori sheet shiny side down on a sushi mat. With wet hands, spread a thin layer of sushi rice over the nori, leaving a small border at the top. Arrange sliced tomatoes and basil leaves in a neat row at the bottom of the rice. Using the sushi mat, roll the nori tightly over the filling, sealing the edge with a bit of water.

Repeat the process with the remaining nori sheets and fillings. Once all the rolls are assembled, use a sharp knife to slice each into 6-8 pieces. Serve the Tomato Basil Sushi Rolls with soy sauce, pickled ginger, and wasabi on the side for dipping.
