Delicious Mediterranean Stuffed Bell Peppers Recipe

Today’s Recipe: Mediterranean Stuffed Bell Peppers

I love sharing new and exciting recipes with my readers, and today I’m excited to introduce you to my Mediterranean Stuffed Bell Peppers! This dish is perfect for a cozy night in or a special gathering with friends and family. The melding of flavors and textures will transport you straight to the Mediterranean coast.

Ingredients:

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.

In a saucepan, cook the quinoa according to package instructions. Once cooked, transfer to a large mixing bowl. Add in the chickpeas, sun-dried tomatoes, Kalamata olives, feta cheese, garlic, dried oregano, paprika, salt, and pepper. Mix well to combine.

Spoon the quinoa mixture into the hollowed-out bell peppers, packing it in tightly. Drizzle olive oil over the top of each stuffed pepper.

Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, until the peppers are tender. Remove the foil and bake for an additional 5-10 minutes to lightly brown the tops.

Once done, remove from the oven and let the stuffed peppers cool slightly before serving. Enjoy the Mediterranean flavors and the burst of colors with each bite.

The approximate total weight of the cooked dish is 1240g, with 4 servings. Each serving weighs around 310g, and has approximately 320 calories.

For a unique twist, try adding a sprinkle of pine nuts on top of the stuffed peppers before baking for an extra crunch and nutty flavor.
