Welcome, food lovers! Today, I have a unique and flavorful recipe to share with you — Pistachio-Crusted Salmon. This dish is perfect for a special dinner for two or a weekend gathering with friends. The combination of buttery salmon and crunchy pistachios is sure to impress your taste buds!

Ingredients:

  • salmon fillets (2, about 200g each)
  • pistachios (100g, shelled)
  • honey (2 tbsp)
  • lemon zest (1 lemon)
  • fresh dill (2 tbsp, chopped)
  • olive oil (2 tbsp)
  • salt and pepper to taste

  • oven

  • cutting board

Start by preheating your oven to 180°C. In a food processor, pulse the pistachios until they are finely chopped but still have some texture. Transfer the pistachios to a shallow dish and add the lemon zest, chopped dill, salt, and pepper. Mix well to combine.

Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle the fillets with olive oil and brush to coat evenly. Then, spread a generous layer of honey on top of each fillet, covering the entire surface.

Next, press the pistachio mixture onto the honey-coated salmon, making sure to coat the fillets evenly. Press gently to ensure the pistachios adhere to the salmon.

Once the salmon is coated with the pistachio mixture, place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and the pistachio crust is golden brown and crispy.

Remove the salmon from the oven and let it rest for a few minutes before serving. The pistachio crust will add a delightful crunch to the tender salmon, while the hint of lemon zest and dill brings a fresh and zesty flavor to each bite.

Tip:

For an extra burst of flavor, squeeze some fresh lemon juice over the cooked salmon just before serving. The acidity of the lemon will enhance the other flavors in the dish and brighten up the overall taste.
