Ingredients:

  • Brussels sprouts (300g)
  • Butternut squash, diced (400g)
  • Red onion, thinly sliced (1 medium)
  • Olive oil (3 tbsp)
  • Balsamic vinegar (2 tbsp)
  • Honey (1 tbsp)
  • Dried cranberries (50g)
  • Crumbled feta cheese (50g)
  • Salt and pepper to taste

To start, preheat your oven to 400°F (200°C). In a large mixing bowl, combine the Brussels sprouts, diced butternut squash, and thinly sliced red onion. Drizzle with olive oil, balsamic vinegar, honey, salt, and pepper. Toss everything together until the vegetables are well coated.

Spread the mixture evenly on a baking sheet and roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and beginning to caramelize. Make sure to give them a stir halfway through the cooking time to ensure even browning.

Once the vegetables are cooked, remove them from the oven and let them cool slightly. Transfer to a serving dish and sprinkle with dried cranberries and crumbled feta cheese. The sweet and tangy flavors of the cranberries and feta cheese perfectly complement the roasted vegetables.
