Ingredients:

  • butternut squash (peeled and grated) – 300g
  • all-purpose flour – 150g
  • egg – 1
  • garlic powder – 1 tsp
  • onion powder – 1 tsp
  • salt – 1/2 tsp
  • black pepper – 1/4 tsp
  • olive oil – for frying

Kitchen Tools:

  • spatula

To start, peel and grate the butternut squash until you have 300g. In a mixing bowl, combine the grated squash, all-purpose flour, egg, garlic powder, onion powder, salt, and black pepper. Mix well until everything is fully incorporated and you have a thick batter.

Heat some olive oil in a skillet over medium heat. Once hot, scoop about 1/4 cup of the batter into the skillet for each pancake. Use the back of a spoon to gently spread the batter into a round shape. Cook the pancakes for 3-4 minutes on each side, or until they are golden brown and crispy.

Serve the savory squash pancakes hot with a dollop of sour cream or Greek yogurt on top for a creamy contrast to the crispy pancakes. These make a great side dish for roasted chicken or a hearty salad.
