Delicious Soba Noodle Salad Recipe

Ingredients:

  • soba noodles
  • grilled tofu
  • mango, diced
  • avocado, sliced
  • red bell pepper, thinly sliced
  • carrot, julienned
  • cashews, chopped
  • cilantro, for garnish

Kitchen Tools:

  • large pot
  • colander
  • grill pan
  • knife
  • cutting board

Preparation:

Start by cooking the soba noodles according to the package instructions. Once they are done, drain them in a colander and rinse under cold water to stop the cooking process.

While the noodles are cooking, grill the tofu on a grill pan until it has nice grill marks on each side. Once grilled, cut the tofu into bite-sized pieces.

In a large bowl, combine the cooked soba noodles, grilled tofu, diced mango, sliced avocado, sliced red bell pepper, julienned carrot, and chopped cashews. Mix everything together gently to combine the flavors.

Serve the noodle salad in individual bowls, garnishing each with fresh cilantro.
