To start, preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes from the inside. Place the peppers in a baking dish and set aside.

In a medium saucepan, cook the quinoa according to the package instructions. While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add the ground turkey and cook until browned. Season with salt and pepper to taste.
