This Thai-inspired pineapple fried rice is perfect for a cozy night in or a weekend gathering with friends. The combination of sweet pineapple, savory chicken, and fragrant spices is sure to impress your taste buds!

Ingredients:

  • long-grain rice (200g)
  • chicken breast, diced (250g)
  • fresh pineapple chunks (150g)
  • red bell pepper, diced (100g)
  • yellow onion, chopped (80g)
  • garlic cloves, minced (3 cloves)
  • fresh ginger, grated (1 tbsp)
  • soy sauce (3 tbsp)
  • fish sauce (1 tbsp)
  • curry powder (1 tsp)
  • vegetable oil (2 tbsp)
  • salt and pepper to taste
  • green onions, sliced (for garnish)

To start, cook the long-grain rice according to the package instructions. Once cooked, spread it out on a baking sheet to cool and dry slightly. In a wok over medium heat, add the vegetable oil and sauté the garlic, ginger, and onion until fragrant.

Add the diced chicken breast to the wok and cook until no longer pink. Stir in the diced red bell pepper and pineapple chunks, cooking until the peppers are tender-crisp. Season with soy sauce, fish sauce, curry powder, salt, and pepper.

Finally, add the cooked rice to the wok, tossing everything together until well combined and heated through. Taste and adjust the seasoning if needed. Serve the Thai-inspired pineapple fried rice hot, garnished with sliced green onions for a pop of color and freshness.
