Delicious Twist: Cheesy Veggie Stuffed Peppers Recipe!

Today’s Specialty: Cheesy Veggie Stuffed Peppers

Growing up, stuffed peppers were always a favorite in my household. Today, I’m excited to share my own twist on this classic dish by infusing it with a blend of cheesy goodness and a unique array of vegetables. These Cheesy Veggie Stuffed Peppers are the perfect way to add a pop of color and flavor to your dinner table.

Ingredients:

  • 6 bell peppers (assorted colors)
  • 1 cup quinoa
  • 1 zucchini, diced
  • 1/2 cup corn kernels
  • 1/4 cup sundried tomatoes, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Kitchen Tools:

  • medium saucepan
  • baking dish

To start, preheat your oven to 375°F. Meanwhile, cook the quinoa according to package instructions in a medium saucepan. While the quinoa is cooking, slice the tops off the bell peppers and remove the seeds and membranes from inside.

In a large mixing bowl, combine the cooked quinoa, diced zucchini, corn kernels, sundried tomatoes, feta cheese, mozzarella cheese, olive oil, salt, and pepper. Mix everything together until well combined.

Stuff each bell pepper with the quinoa and vegetable mixture, pressing down gently to pack the filling in. Place the stuffed peppers in a baking dish and cover with foil.

Bake in the preheated oven for 25-30 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.

Serve the Cheesy Veggie Stuffed Peppers hot, garnished with a sprinkle of fresh herbs or a drizzle of balsamic glaze for extra flavor.
