Today’s Adventurous Eats: Sweet Potato and Black Bean Tacos

As the weather starts to cool down and fall approaches, I find myself craving hearty and warm dishes that are full of bold flavors. That’s why today, I’m excited to share with you my recipe for Sweet Potato and Black Bean Tacos. These tacos are a unique twist on a classic favorite that combines sweet and savory flavors in a deliciously satisfying way.

To start off, gather the following ingredients:

  • 1 large sweet potato, diced
  • 1 can of black beans, drained and rinsed
  • 1/2 red onion, diced
  • 1 bell pepper, diced
  • 2 tablespoons of taco seasoning
  • 6 small tortillas
  • 1 avocado, sliced
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Next, make sure you have the following kitchen tools on hand:

  • baking sheet
  • skillet
  • spatula
  • knife

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Toss the diced sweet potato with a drizzle of olive oil, salt, and pepper. Spread the sweet potato out on the baking sheet and roast in the oven for about 20-25 minutes, or until tender and slightly caramelized.

In the meantime, heat a skillet over medium heat and add a splash of oil. Saute the diced red onion and bell pepper until they are soft and slightly browned. Add the drained and rinsed black beans to the skillet, along with the taco seasoning. Cook everything together for another 5-7 minutes, until the beans are heated through and the flavors have melded together.

Once the sweet potatoes are done roasting, add them to the skillet with the black bean mixture. Stir everything together and cook for an additional 2-3 minutes to combine the flavors.

To assemble the tacos, warm the tortillas in a dry skillet until they are soft and pliable. Fill each tortilla with a generous scoop of the sweet potato and black bean mixture. Top with sliced avocado, chopped cilantro, and a squeeze of fresh lime juice.

This recipe makes approximately 6 tacos, with each serving weighing about 200 grams. One serving is estimated to be around 350 calories.

A clever tip for these tacos is to add a sprinkle of crumbled feta cheese on top for an extra burst of flavor and creaminess.
