Deliciously Cozy: Mushroom Stuffed Bell Peppers Recipe

Mushroom Stuffed Bell Peppers

Today, I’m excited to share a recipe that’s perfect for a cozy dinner at home. The combination of hearty mushrooms and sweet bell peppers makes for a delicious and satisfying meal that’s sure to become a new favorite.

For this recipe, you’ll need the following ingredients:

  • 4 large bell peppers (assorted colors)
  • 250g mushrooms (any variety)
  • 1 small onion
  • 2 cloves of garlic
  • 1 cup cooked quinoa
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil

You’ll also need the following kitchen tools:

  • knife
  • cutting board
  • saucepan
  • baking dish

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes from inside. Place the peppers in a baking dish and set aside.

Next, chop the mushrooms, onion, and garlic finely. In a saucepan, heat some olive oil over medium heat and sauté the mushrooms, onion, and garlic until softened. Add the cooked quinoa, parmesan cheese, dried thyme, salt, and pepper to the mixture. Stir well to combine.

Spoon the mushroom and quinoa mixture into each bell pepper, packing it down firmly. Place the pepper tops back on and drizzle a little more olive oil over the top.

Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, until the peppers are tender. Remove the foil and bake for an additional 5-10 minutes until the tops are slightly browned.

Once the peppers are cooked through, remove them from the oven and let them cool slightly before serving. Enjoy these mushroom stuffed bell peppers hot as a main course or as a side dish for a larger meal.

This recipe makes approximately 4 servings, with each stuffed pepper weighing around 300g. Each serving is about 250 calories.

One unique tip for this recipe is to sprinkle some extra parmesan cheese on top of the stuffed peppers before serving for an extra cheesy finish.
