Unique Dessert Recipe: Caramelized Pineapple Upside-Down Cake

Today, I’m excited to share a delightful dessert recipe that’s perfect for any occasion — my Caramelized Pineapple Upside-Down Cake. This sweet treat is a creative twist on the classic pineapple upside-down cake, with a caramelized twist that adds a rich and decadent flavor. It’s a great way to impress your guests or simply treat yourself to something special.

Ingredients:

  • mixing bowl
  • 9-inch round cake pan
  • whisk
  • rubber spatula

For the cake:
– 1/2 cup (115g) unsalted butter, melted
– 1/2 cup (100g) brown sugar
– 1 fresh pineapple, peeled, cored, and sliced into rings
– 1 1/2 cups (190g) all-purpose flour
– 1 1/2 tsp baking powder
– 1/2 tsp salt
– 1/2 cup (100g) granulated sugar
– 2 eggs
– 1 tsp vanilla extract
– 1/2 cup (120ml) milk

Preparation:

To start, preheat your oven to 350°F (180°C) and prepare your cake pan by greasing it with a bit of butter. Sprinkle the brown sugar evenly across the bottom of the pan, then arrange the pineapple slices on top in a decorative pattern.

In a mixing bowl, whisk together the melted butter and granulated sugar until smooth. Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until everything is well combined. Be careful not to overmix.

Carefully pour the batter over the pineapple slices in the cake pan, spreading it out evenly. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Once the cake is done, remove it from the oven and let it cool in the pan for about 10 minutes. Then, place a serving plate on top of the pan and carefully flip the cake over to release it onto the plate. Allow the cake to cool completely before slicing and serving.
