Today, I’m excited to share with you a dish that combines the earthy flavors of roasted cauliflower with the warm spices of curry in a unique pasta recipe. This dish is perfect for a cozy night in or a gathering with friends and family. Let’s dive into the world of curried cauliflower pasta together.

Ingredients:

  • 1 small head of cauliflower, cut into florets
  • 2 tablespoons of olive oil
  • 1 tablespoon of curry powder
  • 3 cloves of garlic, minced
  • 250 grams of your favorite pasta
  • 1 can of coconut milk
  • Juice of 1 lemon
  • Handful of fresh cilantro, chopped
  • Salt and pepper to taste

Kitchen Tools:

  • baking sheet
  • large pot
  • saucepan
  • strainer

Start by preheating your oven to 200°C. Place the cauliflower florets on a baking sheet, drizzle with olive oil, sprinkle curry powder, minced garlic, salt, and pepper. Roast in the oven for 25-30 minutes until golden brown and crispy.

In the meantime, cook your pasta according to the package instructions until al dente. Drain and set aside.

In a saucepan, heat the coconut milk over medium heat. Add the roasted cauliflower, cooked pasta, lemon juice, and fresh cilantro. Stir everything together until well combined. Cook for an additional 5 minutes to allow the flavors to meld together.

Serve your curried cauliflower pasta hot, garnished with extra cilantro and a squeeze of lemon juice for extra freshness.

This dish weighs approximately 1200 grams in total. It serves 4 people with each serving weighing around 300 grams. Each serving is about 450 calories.

A clever tip for this dish is to sprinkle some toasted coconut flakes on top for an added crunch and a hint of sweetness to balance out the savory curry flavors.
